Easy to grow, this mustard is also cold hardy and vigorous. Don't be mistaken, this is not the actual Japanese wasabi plant, but a great mustard to use fresh in spring rolls, on sandwiches, in stir fry, or traditional mustard-green dishes. Try it at the microgreen stage (7 to 14 days) for a zing on sandwiches or in salads. A cousin to kale and collards, mustard is a tenacious leafy green but it's not as cold-hardy. Grow in clumps about 12-18 inches apart. Use straw mulch to hold in soil moisture. Start 4-6 weeks before the first frost for a fall harvest. For a spring harvest, start seeds 4 weeks ahead of the last frost. You can harvest and allow to regrow over a period of a couple weeks as long as the weather permits. Cut leafy greens 3-4 inches from the ground and allow sufficient time to regrow. GROWING INFO: Direct sow with frost protection as early as late winter or without protection from early to late spring. Sowing short rows every 3 weeks allows for a continuous harvest of both baby leaves and full sized plants. Sow again in late summer for late fall and winter harvests. Optimal soil temperature: 21°C (70°F). Seeds should sprout in 5-10 days. If growing to full size, sow 3-4 seeds in each spot you want a plant to grow. Sow 5mm-1cm (¼-½”) deep and thin to the strongest plant, spaced 10-15cm (4-6″) in the row. All mustards can be grown in containers for baby salad greens. Sow these as you would mesclun mixes, with seeds spaced as near as possible to 1cm (½”) apart. Tracking is only available for all orders $14 and above.
