VINTAGE The Boston Cooking School Cook Book by Fannie Merritt Farmer [HC,1941] A stroke confined her to her home for years as a teenager and kept her from completing her formal education, but her aptitude in the kitchen led her to the Boston Cooking School, a training ground for culinary instruction and professional chefs. She graduated at age 32, and stayed on and became assistant principal and later principal. Although the book was initially rejected by the publisher, Farmer agreed to pay for printing the first 3,000 copies in 1896. The public "ate" it up and the first run sold out quickly. Her cookbook advocated the era's new ideal of "scientific cookery," providing explanations of how foods change chemically during the cooking process and initiating the use of standardized measurements in recipes. To say the book was a major historical landmark in cookbooks would be putting it mildly. A great addition to any kitchen library.
