Description: Sabatier Professional 9.75 inch Carbon Steel Slicer, Knife Sabatier is clearly stamped on the handle and with a magnifying glass you can make out "professional" (not easy to see). Hand forged after drop forged hand ground carbon steel 1950's to early 70's Sabatier Professional slicer in good used condition. Looks to have some use and the blade is almost full. Blade is also straight. Does show tarnish and aging on steel. Square bolstered French knives are referred to as "Canadian pattern" knives, having been originally being imported to Canada. Keep dry when not in use to avoid rust, carbon steel will naturally develop a patina with use. These knives were made in Theirs, France in the 1950‘s thru 70's. They are thin and light at the tip half and stout at the heel for tough work.
