Description: Chef’s or butcher’s knife, very large. Nominally 31cm /12” long, blade itself is actually about 31.8cm (12.5”) long clear of bolster. Officially a Schlagmesser, or “beating knife.” Made in Germany. As of June 2023, carries list price in maker’s own catalog of €349.27 (about $379 U.S.). The bladesmith, H. & F. Lauterjung GmbH & Co., based in Solingen, Germany, presumably shares a family history with its fellow Solingen cutler Puma-Werk Lauterjung und Sohn, maker of the famous Puma sporting knives. H. & F. Lauterjung produces a great variety of knives and other food-handling equipment of exceptionally high quality. However, like other Solingen cutlers such as Güde, Felix, Gehring, Robert Herder, Carl Mertens, and (formerly) Gustav Emil Ern, it sells many of its wares on the German domestic market, especially to commercial clients for trade use in shops, restaurants, and plants, and so is not nearly as well known in the U.S. as Wüsthof and Zwilling Henckels. Besides, its product was long sold stateside under the names of retail merchants rather than that of its own maker, which later retired the Tarpona brand, retaining the conifer logotype. Blade is new old stock from pre-1990 and flawless. Fully forged, with full tang and bolster, triple-riveted hardwood handle. Maker’s name and logo are stamped into obverse side of blade, and Tarpona name and logo painted onto obverse handle scale. Weighs 423g (14.9 oz.). Full length about 46cm (just over 18”).
