Oven dried at 170 degrees for 3 hours and then placed in the dehydrator at progressively lower temps to retain color and flavor. Nearly a two day process. We begin drying our peppers early in the season just as soon as we have an over abundance of fresh fully ripe peppers. Our dried peppers truly are premium quality because we do it that way instead of using what comes out of the left over harvest at the end of the season.
