The mixture should be loose and well-draining to allow for proper airflow.Sterilize the substrate by pasteurizing it. You can do this by heating it to 160-170°F (71-77°C) for about 1-2 hours. This step helps to kill unwanted microbes and competing fungi. Adjust pH (Optional):The ideal pH for Cantharellus cibarius is slightly acidic, ranging between 5.5 and 6.5. If your substrate's pH is too high or low, you can adjust it using agricultural lime (to increase pH) or sulfur powder (to lower pH). Inoculate the Substrate:Once the substrate has cooled to room temperature, mix the grain dry mycelium evenly into the substrate. Use about 1 cup of mycelium per 1-2 gallons (4-8 liters) of substrate.Ensure that the mycelium is evenly distributed to increase the chances of colonization. Container Setup:Fill growing containers or pots with the inoculated substrate. Gently press down to create an even surface, but do not compact the substrate too tightly, as airflow is important.Leave about 1-2 inches (2.5-5 cm) of space at the top of the container to allow for watering and airflow. Moisture Management:Water the inoculated substrate lightly using sterile water. The substrate should be moist but not waterlogged. Excess moisture can lead to mold or other fungal contaminants.Use a spray bottle to mist the surface regularly, keeping it evenly moist throughout the colonization process. Environmental Conditions:Cantharellus cibarius prefers cool and humid conditions. The ideal temperature for colonization and fruiting is between 55-65°F (13-18°C). Ensure good ventilation without direct airflow on the containers.If growing outdoors, place the containers in a shaded area, ideally under a tree, to simulate their natural environment. A shade cloth can be used to protect the substrate from direct sunlight.If growing indoors, maintain a high humidity level (around 80-90%) using a humidifier or by placing a humidity tent over the containers. Colonization Period:The mycelium will begin to colonize the substrate over several weeks. During this time, keep the substrate moist and monitor for any signs of contamination.White mycelial growth should become visible across the substrate's surface after 2-4 weeks. It may take up to several months for the mycelium to fully establish itself, as Cantharellus cibarius grows relatively slowly compared to other species. Fruiting and Harvesting:Once the mycelium has fully colonized the substrate, it will begin to produce small fruiting bodies. This process can be triggered by cooler temperatures and a slight reduction in moisture.Harvest the chanterelles when they reach a size of about 2-4 inches (5-10 cm) in diameter, carefully cutting them at the base with a clean knife or scissors.Be patient, as it may take up to a year for the first flush of chanterelles to appear due to the symbiotic nature of the mycelium.Maintenance Tips:Maintain consistent moisture levels, but avoid overwatering, as standing water can lead to contamination.If contamination is detected (e.g., green mold), carefully remove the affected area and increase airflow to reduce humidity temporarily.Outdoor cultivation generally has a higher success rate due to the natural environment, especially if grown near suitable trees like oaks or pines.By following these steps, you can successfully grow Cantharellus cibarius from grain dry mycelium and enjoy this delicious and sought-after mushroom at home.
