Fred Harvey, a railroad freight agent, saw a business opportunity in serving the railroad passengers. In 1876 he started his hospitality business with the opening of 3 eateries located along the Kansas Pacific Railway. This fledgling start lead to a contract with the Atchison Topeka and Santa Fe Railway for Harvey to provide eating establishments along their route. By 1878 Harvey opened his first hotel along the AT&SF line. Harvey House hotels and restaurants became quite famous and popular. They continued to serve Railroad passengers for many years.
