Tarpon Springs -- The Shrimp Boat restaurant, recently anchored at 530 Athens Street, is a Greek equivalent of the kind of down home cafe found off the main drag in a small town. But as a Greek enterprise, it has a style rarely found in American restaurants. With the vitality of a Greek taverna, it invites a kind of extroverted, spontaneous behavior that leave open the option - at any given moment - for dancing, singing, hearty drinking and eating "I want to create a homey atmosphere," said Kay Kavourakis, who owns the restaurant with musician Spiro Skodilis. "I want customers to feel they can go up to the window (in the kitchen) and ask the cook to prepare something missing from the menu.
