Violet Star Globe Artichoke Violet Star artichokes are smooth and ripe, with bursting flavor. Plant seeds in the spring indoors, and then transport them outdoors to an area with full sun. These plants are easy to grow at home. Plant seeds in light soil that is not overwatered, and using a fertilizer every 10 days may help enhance growth. Plants should reach full maturity between 85-100 days, depending on the climate that they are planted in. After harvest, artichokes are best when steamed or roasted with spices or sauce.
